JOB SUMMARY
In charge to establish and maintain the Twin Doves Golf Club's Kitchen policies and procedures by providing operational and administrative direction to the Kitchen operation. Is further responsible for any functions or outside caterings arranged' by the Twin Doves Golf Club. Is responsible for his personnel and the smooth operation of his department in general.
Is in charge of quality, hygiene and presentation of food served in all outlets. He manages the guest satisfaction efforts of F&B outlets in accordance with the Twin Doves Golf Club's philosophy. Maintains up to date records on Kitchen staff, personnel attendance, appearance, standards, work and vacation schedules, labor costs, payroll, absenteeism, turnover and disciplinary action.
JOB DESCRIPTION
• Control the quality and amount of his production.
• Control the hygiene in his work areas, equipment and materials.
• Check the consumption of goods.
• Control the profitability of his production.
• Maintain the food cost mentioned in the budget.
• Approve orders of supply for food and transfer them to Purchasing Manager
for further procedures.
• Work closely with the Food' and Beverage Director.
• Approve the weekly work schedule of his Staff.
• Develop positive attitude on job skills, knowledge, autonomy and the creativity
of the staff.
• Provide them the basis of working in a kitchen in order to increase their
qualification and culinary knowledge.
• Adapt to their capacities and aptitudes.
• Respect the needs and individuality of the staff and develop their self
confidence.
• Training of the staff.
• Control the daily operation.
• Develop kitchen staffs skills on delegation.
• Work and communicate closely and effective with all departments.
• Set an example and ensure that staff adheres to dress code and behavior as
well as hygiene standards.
• Capable of developing new, as analyze existing products and special
promotions that will improve guest patronage under the guideline of Twin
Doves Golf Club's policies.
• Safeguard guests and employees with knowledge and application of safety,
accident prevention, fire drills and first aid.
• Ensure that all guest complaints relevant to kitchen areas are handled in a
professional manner. Obtaining maximum results in the kitchen areas in terms
of quality levels, performance and standards of service as techniques with-the
aim of maximum guest satisfaction at a minimum of cost.
• Create new menus and promotions for' all outlets, including' banqueting each
new season.
• Conduct weekly food meetings to discuss:
• Financial results. Business plan.
• Changes in content of operation.
• New management policies.
• Work closely with the Twin Doves Golf Club suppliers.
Other duties as assigned.

Yêu cầu ứng viên
- Male (Vietnamese only). Age from 38 to 48.
- Education level: Hotel Management - University.
- Minimum 5 years experience in the Kitchen.
- Have working experience in the capacity of Executive Chef.
- Managerial experience and public relations skill are required.
- Internationally recognized degree preferable.
- Be able to communicate in English.
- Computer proficiency required.
- Able to work shift.
