- Winking Seal Beer Co. is a Saigon, Vietnam-based brewery that was founded in 2016.
- We believe in craft in all forms and married our passion for beer and brand with Indochine adventure-inspired ‘serious’ beers for ‘not so serious’ people and Art Deco-influenced design to create that moment of lift off when atoms and art collide in a glass igniting a perfect storm.

*** The Chef Role:
Our Executive Chef is a key senior member of our team who is responsible for the development and continued innovation of our food menu, building and leading a team, and managing the financial aspects of our kitchen.

- Commercially-minded and able to create a financially feasible food menu and manage kitchen-related costs.

*** Requirements:
- Minimum 2 years experience as a Chef or similar senior role.
- Openness and willingness to learn new techniques (e.g. cooking with beer).
- Comfortable cooking both Vietnamese and American cuisine).
- A laser focus on quality.
- Ability to multitask and prioritize effectively in a high pressure environment while maintaining calmness, composure and a sense of humor.
- Ability to think quickly and adapt to changing situations while maintaining the highest quality of product and other established standards.
- Flexibility with schedule requirements.
- Responsible for daily food preparation and service.
- Maintain COGs below 25%.
- Develop menu items with Taproom General Manager.
- Enforce food safety and service SOPs and regulations.
- Arrange weekly BOH schedule.
- Manage ordering of ingredients and maintain prepared and purchased inventory.
- Compile monthly food sales report.
- Record monthly physical inventory count.
- Fluency in English is required with Vietnamese fluency a plus.
