Brief:
Nha Trang is currently looking for a new Executive Chef to lead the kitchen brigade to new heights and culinary achievements. The Resort is a 5-star boutique property with 3 restaurants, room service and in-villa dining. It also caters to weddings and events on its private beach. All functions are bespoke and tailored to customers’ needs.
Currently, our restaurants feature the following food styles:
Asian and Western Faire including themed evenings, live cooking stations, seafood menus and BBQ, poolside and room service.
Rustic Homemade Italian and Asian Tapas.
Breakfast, both buffets and ala carte.
Asian cooking classes.
We are looking for an individual that has a real passion for food, is ready for the next challenge, and is a natural leader that can command a large kitchen staff in 3 outlets. The candidate must be willing to push boundaries, challenge the norms and take the culinary experience to a whole new level. This is a hands-on position and the Executive Chef is required to attract and retain staff, maintain a cooperative relationship with team members and optimize staff productivity.
Responsibilities
• Ensuring promptness, freshness and quality of dishes.
• Coordinating staff tasks.
• Implementing hygiene policies and examining equipment for cleanliness.
• Designing new recipes, planning menus and selecting plate presentation.
• Reviewing staffing levels to meet service, operational and financial objectives.
• Hiring and training kitchen staff, such as cooks, food preparation workers and dishwashers.
• Performing administrative tasks, taking stock of food and equipment supplies, and doing purchase orders.
• Setting and monitoring performance standards for staff.
• Obtaining feedback on food and service quality, and handling customer problems and complaints.
• Plan and direct food preparation and culinary activities
• Supervise kitchen staff’s activities
• Arrange for equipment purchases and repairs
• Comply with nutrition and sanitation regulations and safety standards
• Maintain a positive and professional approach with coworkers and customers

Yêu cầu ứng viên
• 8+ years culinary education.
• 5+ years’ experience in similar position at 5-star level
• Prior experience in Asia with experience in Vietnam is a plus
• Advanced knowledge of food profession principles and practices
• Proficient knowledge of Asian and Western Cuisine
• Very comfortable with the preparation and cooking of all Seafoods
• Working knowledge of Pastry Kitchen
• Excellent knowledge of BOH systems, ordering and inventory
• Excellent communication skills
• Ability to meet deadlines
• Available to work on call, shifts, after hours, over weekends and on public holidays
• Proven working experience as a head chef
• Excellent record of kitchen management
• Ability to spot and resolve problems efficiently
• Capable of delegating multiple tasks in multiple kitchens
• Communication and leadership skills
• Keep up with cooking trends and best practices especially in the growing Asian and Chinese markets
• Working knowledge of various computer software programs (MS Office and POS)
• English language Skills
• 5+ years’ experience in similar position at 5-star level
