We are currently seeking a motivated Head Chef & line cooks to work on a River Ship of the Mekong in the South of Vietnam. The Ship cruises between Vietnam and Camobdia. We are also seeking positions of pastry chefs and line cooks in the north of Vietnam on our River Ship that cruises along the river between Viet Tri, Hanoi and Ha Long.

Chef’s Job Description:
Cook / prepare the provided menu items as per Pandaw Standard Recipes
Sanitize food preparation and serving areas
Stir or turn foods to ensure even cooking
Cook and season food according to recipes
Test foods before service to determine if they have been sufficiently cooked – methods employed for this purpose involves smelling, tasting, or piercing them with utensils.
Prepare, arrange, and serve food to waiters for distribution
Give estimate of expected food consumption; requisite or purchase supplies
Consult with Head Chef as regards menu plans
Keep all necessary Food Safety documentation
Figure out what quantity of food will be needed for a specified period
Supply orders to Head Chef for food supplies when available food is getting low
Assist in Checking and Stocking of incoming Ordered items
Assist Head Chef in monthly Stock Count
Get customers’ orders and prepare food according to specification
Ensure that the equipment are always in the right condition; report to employer when any fault occurs
Keep work areas clean and monitor oven temperatures
Assist other cooks in times of emergencies
Create and prepare recipes and meals
Prepare side dishes and desserts
Perform other tasks as per Head Chefs instructions.
Head Chef Job Description:
Overall responsibility for the kitchen’s daily operations.
Responsible for cleanliness of kitchen, storerooms, and all refrigeration units.
Liaising with the relevant companies for food orders.
Following Company Menus and Standard Recipes.
Creating new dishes and menus.
Plating & Tasting of all Dishes leaving the kitchen.
Responsible for Kitchen Crew on the job training.
Maintaining/raising the food’s profit margins for Pandaw.
Monitoring and controlling and ordering stock levels & carrying out monthly stock counts.
Ensuring correct stock rotation & labelling procedures are followed.
Implementation of health and safety procedures in the kitchen.
Responsible for maintaining HACCP & Hygiene Standards and associated documentation.
Estimating costs and ensuring all purchases come within budget.
Monitoring of any maintenance issues and reporting.
Liaise with Dining Supervisor & Guests to gain feedback on Quality of menu presented.

Certificate of completion of any training program in cooking, or vocational school attended
Cooking experience in any food service establishment
Must possess passion for cooking
Ability to multitask and display highest possible form of endurance when conditions get tough
Ability to adhere strictly to directives and instructions from superiors
Sound mental condition: ability to avoid as much mistakes as possible during work
Must have integrity and honesty
Possess good communication skills
Knowledge of the basic skills involved in cooking; how to prepare recipes offered by the company; how to use pans, knives, grills and other cooking equipment
Must have self-confidence to be comfortable with all persons
Must possess the ability to be flexible
